The Danube receipts with delicious fish

The Danube basin is a diverse ecosystem, home to 2000 plant and 5000 animal species. The river enriches the soil, where fields, vineyards, eco villages and agro tourism grow on both riverbanks throughout all ten of the Danube countries.

I like very much fish soup, very , very good. If there is one dish that brings to the table all the Danube countries, it must be fish soup. The soups are cooked in traditional pots, full of many different sorts of small fish, small carp, pike and whitefish. If it s made with big fish, only the tails and heads are put into the pots, mostly catfish and carp. Fisherman s soup is hot , spicy paprika based soup, characteristic of the cuisines of the Pannonian Plain on the Danube river.  Halasz is arguably one of the spiciest dishes native to the European continent. The Serbian version is called corba and the name comes from Persian, meaning the salty stew obtained by cooking meat.

According to traditional recipehs, 3 kg of fish is added , with most of it being carp, almost 75%, then catfish 15% and pike or perch 10%. It s served with homemade thick cut soup pasta. The soup is best accompanied by dry white wine, Riesling, which may be diluted with soda water into a spritzer.

Another receipt is fish cakes tipically served with a freshly prepared cucumber and potato salad. We need to prepare this dish 600 gr white fish, bream, nase, barbel and 2 soaked bread rolls, 1 onion, 1 small bunch of dill and parsley, 100 gr vegetables, finely diced like a carrots, leeks, celery, 2 eggs, 6cl Noilly Prat or Pernod, clarifieyind butter or rapessed oil for frying , salt and pepper.

Peel and dice the onion, wash the parsley and dill, dry and finely chop. Lightly saute in some butter. Finely dice the vegetables and blanch in boliling water. You must to mix all the ingredients toghether with the eggs and pass the mixture through a mincer. Season with salt and pepper and add 6 cl Noilly Prat. Form the mixture into small patties and fry them on both sides until golden brown.
